After little Pippa came, special holidays and occasions have become more important to me. I therefore decided to try and make some Easter cupcakes, I would try to bake... Not that it was my first time but let's just say it has been with a mixed success.
A family member showed me some cupcakes decorated as sheep and they were just perfect. I made them with a lemon and vanilla cupcake dressed like a sheep with a marzipan creme and a lot of marshmallows.
- 100g soft butter
- 140g sugar
- 2 eggs
- 2,5 dl. butter milk
- 2 teaspoon vanilla
- 280g flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 2 teaspoons baking powder
- 3 organic lemons
- 4 dl. creme
- 250g marzipan
- Mini marshmallows
- Egg white
- 3-4 table spoons powdered sugar
- Dark chocolate
They can take some time to dry up, so I start with this. Take 1 teaspoon of egg white and mix with powdered sugar until you have a solid paste. Fill it into a small plastic bag and make a small hole in one corner to needly press out the icing and make the white part of the eye (you can also use pre made icing).
When they turn hard you can melt some dark chocolate and with a toothpick (or similar) make the dark dots in the eyes.
Out of marzipan (alternatively icing) make 15 round balls and 30 smaller balls. These you form to be the head and ears for the sheep and you can use a tiny bit of water to glue the eyes to the head.
In a large bowl mix the soft butter and sugar, when even add egg, vanilla and butter milk. Now you can add the dry ingredients flour, salt, baking soda and baking powder. Then add lemon peel.
Fill each cupcake liner approximately 2/3 full
Bake for 20-25 min. at 185 degrees
While the cupcakes are cooling off make the whipped creme and add the marzipan. Place the marzipan creme on top of the cupcake, then the head and as many marshmallows as possible :)
And 1, 2, 3 they are ready to eat.
